Luke Nguyen for Doltone Hospitality Group
Doltone Hospitality Group are partnering with Luke Nguyen again to create a flagship South East Asian Restaurant. Luke is a celebrity chef with an enormous following both in Australia and internationally. Author, chef, restauranteur and TV presenter, Luke’s restaurant will be a wonderful addition to the new Sydney Fish Market.
Bayside Boys (Trippas White Catering)
Bayside Boys is an entirely new concept by the team at Trippas White, who are one of Australia's largest hospitality groups, with 35 venues in their portfolio. Bayside Boys will be a casual eatery, where lobster, burgers and craft beers will dominate the menu. It is inspired by Southern USA and the East Coast of Australia, featuring 'Po' boys' which is a style of hot sandwich from Louisiana.
Dirty Red
An Inner West institution, the team at Dirty Red will take things up a notch with an extensive bar and cocktail menu and a variety of shared plates, focussing on the best local produce and taking full advantage of those beautiful sunsets over Blackwattle Bay.
The Japanese Collective
The Japanese Collective will feature Ramen, Donburi, Seafood BBQ and a Sake Bar. It is backed by Hidetoshi Tsuboi, Libras Ting and Takeo Muramoto, who between them are responsible for delivering some of the most awarded Japanese concepts in Sydney and Japan including Hakatamon Ramen, Tsukiyo Street Food and Sekka Dining in Sydney and Kamameshi Ichie and Patisserie Ichi in Hokkaido, Japan.

Banh Mi & Phin
Banh Mi & Phin will offer Vietnamese street food with a focus on fresh salads, rice paper rolls and the best Banh Mi. Hailey Nghiem and Charlie Dinh both have an impressive pedigree, having worked at some of Sydney’s top establishments and are setting up their first venture with the Sydney Fish Market.
Nanjing Dumplings
Nanjing Dumplings menu will feature both traditional and specialty dumplings and one of the only places in Sydney to experience Nanjing-style xiao long bao, a doughier and slightly sweeter version of Shanghai’s most famous soup dumplings.
Cow & The Moon
First opened in Enmore in 2010, this family run, artisan gelateria was voted world’s best gelato in the Gelato World Tour in Italy in 2014. A true dessert bar with a range of ice cream cakes, great coffee, and the best gelato.
